Really, though, I think I see eye-to-eye with the Times on Potrillos. This is a no-frills truck, serving your standard fare better than many. Most, even. That’s not a backhanded compliment: Simplicity is complex.
The difference lies in the basics. Here, the carnitas come juicy and with a proper chew. That’s a delicate balancing act, as all too often, the meat ends up being either too greasy or too dry. Potrillos hits that sweet spot right in the center.
The tacos are topped with the usual suspects: onion and cilantro, alongside green and red salsas. A couple of radishes and a charred spicy pepper come on the side.
Price-wise, a plate of four is $12—not too bad in this economic climate.
It’s a simple spot, relatively speaking, and that’s Potrillos’ strength: Well-made traditional dishes.
I can get behind the Times’ claim: this South Seattle truck deserves its place on the top 30.
What To Order: Your standard tacos will do just fine.
